Roasted Herb Butter Chicken Ingredients Herb Butter1 tbsp fresh thyme1 tbsp fresh rosemary1 tsp sage1/2 cup shallots (finely diced)1 tsp garlic (grated)1 tsp lemon zest1 tsp honey1/2 tsp salt4 tbsp butter (softened)Chicken6 shallots (roughly sliced)2 heads garlic (halved)2 tbsp olive oil1 whole chicken (or 4 bone in & skin on legs)2 tsp salt1 tsp ground black pepper Gravy 3 tbsp AP flour2 cups chicken broth2 tbsp dark soy sauce1 tsp ground black pepper Steps Chop herbs finely, combine with the rest of the ingredients in a bowl, mix well & set aside.Place shallots, garlic & parboiled potatoes in a roasting pan & toss with olive oil.Pat chicken dry with paper towels, rub herb butter all over, under skin & inside the cavities.Sprinkle salt & pepper, rub & place chicken into roasting pan.Place pan in a preheated 200 deg C oven for 40 mins, reduce heat to 180 deg C & cook for another 20 mins.Transfer potatoes & chicken onto a serving plate, shallots & garlic in a separate bowl.Heat roasting pan on medium, add flour, chicken broth & whisk to a boil.Add baked shallots, baked garlic cloves, add soy sauce & black pepper.Taste to adjust seasoning & cook till gravy thickens to desired consistency.
