Download ImageLamb Seekh Kebabs Ingredients;– 500g lamb mince– 1 tsp coriander seeds– 1 tsp cumin seeds– 1 medium onion– 2 green chillies– 1 tbsp mint leaves– A handful of fresh coriander– 6tsp Shan Seekh Kabab Spice powder– 1 1/2 tsp salt– 4 garlic cloves– 1 inch piece of ginger– 1/2 tsp red chilli flakes– 1 tsp garam masala– 1 tsp black powderSteps1. Toast the seeds in a pan for around 10mins until flagrant and blitz to a fine powder in a blender. Add the onion, chillies, mint leaves, coriander, garlic and ginger and blitz once more.2. Squeeze out the moisture from the mixture in small handfuls and add to a large bowl. Add the seekh kabab powder, salt, chilli flakes, garam masala and black powder and mix well until combined.3. Knead the mince into the spices for around 5mins and until you develop a stringy texture. Cover the bowl and ideally leave in refrigerator overnight, if not, at least for a few hours.4. When you’re ready to fry, take the mince out of the fridge and roll small handfuls into long kebabs. (Roll into thinner/longer kebabs as they will shrink when you fry them.)5. Heat a few tbsp oil in a wide set pan and add the kebabs once the oil is hot. Cover with a lid and turn each kebab so each side cooks evenly – this takes around 15-20mins.6.
