Grilled Zucchini With Warm Yogurt Ingredients 4 small to medium zucchini, sliced in half4 Tbs unsalted butter1⁄4 tsp saffron threads, roughly crushed2 1⁄2 Tbs olive oil1 cup Greek yogurt1 tsp cornstarch2 cloves garlic, minced1⁄2 tsp dried mint1⁄2 tsp coriander seeds, toasted & lightly crushed1 handful fresh mint leaves1⁄2 lemonSalt and freshly ground pepper Directions 1. Preheat grill on high.2. Place butter and saffron in small saucepan over medium heat. When butter has melted, place aside to infuse flavor.3. Toss zucchini with oil, 1⁄2 tsp salt and a generous grind of pepper. Place on cookie sheet in pre-heated oven at 300 for 10-15 minutes cut side up. Remove, grill cut side down a few minutes.4. Make sauce: In a large bowl whisk cornflour with 3 Tbs water, add yogurt, garlic, dried mint, remaining oil and 1⁄2 tsp salt. Whisk well.5. Transfer to skillet, cook stirring continuously for 10 minutes over low heat until thickened slightly. Do not boil, sauce will separate.6. Pour sauce onto serving plate, top with zucchini, spoon saffron butter over the top , sprinkle with the coriander seeds and mint leaves. Squeeze lemon on top. Serve immediately.
