Garlicky Roasted Pepper Salad Ingredients 500 g red or green peppers of choice1 head garlic (cut in half across)2 tbsp olive oil1 tsp salt (divided)1/4 tsp black pepper1/4 tsp chili flakes1 tbsp extra virgin olive oil1/2 tsp lemon juice Steps Preheat oven to 180 deg C.Drizzle olive oil onto peppers & garlic, sprinkle with 1/2 tsp salt & pepper & place in oven to roast for 30-45 mins (flipping over halfway) till they start to caramelize & soften.Remove from the oven, set aside for 15 mins to cool down.When cool enough to handle, peel off skins, chop flesh into bite sized pieces & transfer into a bowl.Squeeze soften garlic cloves onto chopping board, mash with remaining salt using a fork & add into bowl with chopped peppers.Add chilli flakes, extra virgin olive oil & lemon juice, mix well & taste to adjust seasoning.Add any chopped fresh herbs of choice or serve them on a bed of rocket/arugula & enjoy at room temp or chilled.
