Download ImageWatch Video Crispy Chives Dumplings Ingredients250 gr Chives, chopped200 gr ground chicken200 gr deshelled shrimp, minced70 gr dried glass noodle4 large eggs, beaten3 garlic cloves, minced5 shallots, minced2 tsp sesame oilOil for stir fry and shallow frying1 pack of Gyoza wrappersSeasoning2 tbsp fish sauce1 1/2 tbsp oysters sauce1 tbsp shaoxing wine1 tbsp sugar1/2-1 tsp Salt1/2 tsp msg1 tsp white pepperDipping Sauce2 tsp rice vinegar2 tbsp sugar3 garlic cloves3-4 bird’s eye chili (optional)5 red long chili1/2 cup warm water1/2 tsp saltSteps Making Dipping Sauce1 Blend garlic, chilies and water in a food processor until smooth2 Transfer mixture to a sauce pan, Bring it to a boil, add rice vinegar, sugar and salt, mix well Off the heat, top the sauce with more chopped garlic if desiredSteps Making Dumplings1 Soak glass noodle in hot water until soft, strain well and cut into small pieces2 Add 1 tbsp of oil in a pan and scramble the eggs to small pieces3 Add 2 tbsp of oil in a large pan, stir fry garlic and shallots until golden4 Stir in chicken and prawns until cooked and dry for 3-5 mins5 Add scrambled egg, glass noodle and seasoning and mix for 1-2 mins6 Off the heat, add in chives and sesame oil and mix well for 1 min Let it cool7 Divide a pack of wrappers into 2-3 portions, roll it out to 12 cm in diameter and peel8 Take one wrapper and place 2 tbsp of filling in the center, wet the edges and fold into half, then pinch from each side to the center, and pinch again to close the dumpling Do the remaining9 Heat good amount of oil in a pan, shallow fry dumplings over medium heat for 1 min each sides until crispy and golden brown, do it in batchesServe fried dumplings while hot and crispy with the dipping sauce Source : www.instagram.com
