Steamed Spicy Soy Garlic Eggplant Ingredients Eggplant1 large or abt 250 g eggplant (cut into 3 inch long batons)1 tsp saltwater (for steaming)Sauce4 cloves garlic (minced)1 large red chilli (minced)1 scallion (finely chopped)2 tbsp neutral tasting oil (boiling hot)1 tbsp soy sauce1 tsp oyster sauce (substitute with same amount of soy sauce for vegan)1/2 tsp salt1/4 tsp sugar1/8 tsp ground white pepper Steps Add salt to eggplant batons, massage for 1 min & set aside for 10 mins.Rinse, drain & pat dry before arranging on a plate that can fit into steamer.Bring water to a boil in a large pot or pan, place plate of eggplant (slightly elevated by a small bowl) in the middle, cover with a lid & steam for 15 mins.Meanwhile, add all ingredients for the sauce into a bowl, mix well & set aside.Remove plate of eggplant from steamer, drain excess water & transfer to serving plate (if not using the same plate)Pour sauce over steamed eggplant & serve immediately.
