Spiced Couscous Ingredients 1&1/2 cups couscous2 tbsp olive oil1 cup onion (finely diced)3 cloves garlic (minced)1 tsp cumin powder1/4 tsp cinnamon powder1/4 tsp paprika powder (sweet or smoked)3 cups vegetable broth (or water)1/2 tsp salt (increase slightly if not using broth)1/4 tsp ground black pepper1/2 cup raisins (or sultanas/cranberries)1/2 cup nuts of choice (toasted, I added pistachios)1/2 cup fresh parsley (chopped) Steps Heat a large pan on medium high. Add olive oil, onion, garlic & spices, sauté until onions are translucent (abt 5 mins)Add broth, cover & bring to a boil.Remove from heat, add couscous & stir for 10 secs.Cover, let it sit for 10 mins, or until couscous has absorbed all the broth.Sprinkle raisins, cover & let it sit for 20 mins to cool down completely.Fluff with a fork, ladle onto serving plates or bowls, sprinkle nuts, parsley & chilli flakes (optional) just before serving.
