Ingredients 1 cup dried @cortasfood pearl CousCous (moghrabieh)1⁄4 teaspoon cumin, paprika & turmeric1⁄2 red, green, and yellow capsicum, finely chopped1⁄2 red onion, finely choppedShredded iceberg lettuceShredded red cabbageChopped parsleyChopped fresh mintChopped spring onionToasted slivered almondsDried currantsPumpkin seedsSunflower seeds Dressing 1 lemon juiced, olive oil, 2 small cloves crushed garlic, salt & pepper to taste Steps In a medium saucepan, heat about 1 tablespoon of olive oil. Add the pearl couscous and toss it around to toast (the couscous pearls should turn a nice golden brown). Add the cumin, paprika and turmeric and stir.Boil 1 1⁄2 cups of water and add it to the toasted pearl couscous. Season with salt. Bring to a boil, then turn the heat to low. Cover and cook for about 15 minutes or until the pearl couscous is tender.
