Download ImageMacarona Bilaban (Lebanese Pasta In Yoghurt Sauce) IngredientsPasta400 g pasta of choice1 tsp saltwater for boilingCaramelised Onion2 tbsp olive oil2 cups onion (sliced)1/2 tsp allspice1/2 tsp salt1/4 tsp ground black pepperYoghurt Sauce3 cups plain yoghurt (dairy or plant based)1/2 cup tahini3 cloves garlic (grated)4 tsp dried mint1/2 tsp salt1 tbsp lemon juiceGarnishpine nutsparsley or cilantro (chopped)chilli flakesStepsBoil pasta in salted water until al dente, drain & set aside.Meanwhile, heat olive oil in a pan on medium low heat, add onion & cook for 15 mins until it starts to caramelise.Add allspice, salt & pepper, continue cooking until it reaches desired doneness (I like mine charred & crispy) & set aside.To make yoghurt sauce, mix all the ingredients together using a fork, taste to adjust seasoning & set aside.Toast pine nuts with 1 tsp of olive oil in a pan until golden brown & set aside.To serve, layer pasta, pour yoghurt sauce, caramelised onion & top with pine nuts & chopped herbs.
