Ingredients (3-4 Servings) 1 tbsp olive oil1/2 an onion chopped (or 1 small)2 small garlic cloves minced1 tsp dried oregano1 tbsp all purpose flour1 1/2 cups chicken or vegetable broth1 can diced tomatoes (400g)Salt & pepper to taste2 cups tortellini1 tbsp heavy cream (or more if you like)1-2 cups fresh spinach (I used only 1 cup, but you can definitely add up to 2 cups)Shredded parmesan for garnish Steps Heat 1 tbsp of olive oil in a big pot on medium heat and cook the onions until slightly browned. Add the oregano and garlic and cook for another minute until fragrant. Sprinkle 1 tbsp of flour and mix for around 30 seconds. Add the broth, diced tomatoes, salt and pepper, bring to a boil and simmer for 10 minutes. Once done, remove from heat and blend until smooth with a hand blender (or a regular blender). Return to the stove and add the cream, stirring until it’s entirely blended in. Add the tortellini and cook for a few minutes (or as instructed on the packaging). Add the spinach and cook for a few more minutes until they’re wilted. Serve warm with lots of shredded parmesan and a side of bread to soak in all the soup yummines. Enjoy! Source : www.instagram.com
