Download ImageGulai Ikan Kurau Kering Ingredients1 cup salted threadfin (cut into bite sized pieces)2 tbsp oil1/2 cup onion (sliced)2 cloves garlic (sliced)2 cm ginger (julienned)1 fresh red chilli (sliced)1&1/2 tbsp fish curry powder1 tsp tamarind paste1 cup water2 cups vegetable of choice (okra, eggplant, potato, long beans, pineapple, etc)1/2 cup coconut cream/milkFried Aromatics3 tbsp oil1 cup onion (sliced)2 cloves garlic (sliced)1/2 tsp cumin seeds1/2 tsp mustard seeds1/4 tsp fenugreek seeds12-15 curry leavesStepsSoak salted fish in hot water for 30 mins, drain & set aside.In a small pot, heat oil on medium high.Add onion, garlic & ginger, fry till onion turns translucent.Add red chilli & curry powder, cook for 1 min.Add fish, tamarind & water then bring to a boil.Add vegetables & coconut cream/milk, reduce heat to low.Meanwhile, prepare a small pan & add oil for the fried spices.When hot, add the rest of the ingredients & cook till onion starts to caramelise.Add fried spices into the pot with the fish curry, turn off the heat, place the lid & leave it for 10 mins.Give it a good stir, taste to adjust seasoning & serve with white rice.
