Download ImageCrispy Rice Paper Dumplings Filling Ingredients4 tbsp vegetable oil (divided)1 tsp garlic (grated)1 tsp ginger (grated)1/2 cup scallion (chopped)3 cups cabbage (finely shredded)1 cup carrot (julienned)1 cup mushroom (finely diced)1 tbsp soy sauce2 tsp sesame oil1/2 tsp salt (to taste)1/4 tsp ground white pepper (to taste)Dipping Sauce2 tbsp soy sauce2 tbsp rice vinegar1 tbsp water1 tsp sesame oil1/2 tsp honey1/4 tsp Sriracha1/4 tsp sesame seedsGarnishfresh red chillies (sliced)scallion (chopped)StepsHeat 2 tbsp oil in a pan on medium high, add garlic, ginger & scallions, sauté till fragrant (abt 10 secs)Add mushroom, carrots & cabbage, fry for 2 mins.Add the rest of the ingredients for the filling & cook until vegetables sweat a bit but still crisp (abt 3 mins)Taste to adjust seasoning & set aside to cool.Combine all ingredients for dipping sauce in a small bowl & set aside.To start wrapping, dip 1 rice paper in water for a few secs on all sides until it is pliable but not too soft.Lightly moisten work surface to prevent rice paper from sticking, add 1-2 heaped tbsp of filling to the center of rice paper.Fold dumpling by bringing bottom half up to cover filling, bring left side up & over to the center & right side up & over the center, then fold from bottom up (away from you) to make an “envelope”.Heat oil in a pan over medium heat, fry dumplings in batches (so they won’t stick together) until browned & crispy.Serve immediately with dipping sauce.
