Download ImageRamen Noodle Soup Ingredients1 Tbs olive oil5 shallots, diced1 bunch green onions6 garlic cloves, minced4 Tbs grated ginger or ginger paste1 10 oz box dried ramen noodles or rice noodles (we used brown rice and millet from lotus foods)12 cups prepared boxed broth4 Tbs tamari3 whole star anise (do not skip this!)1 lg bunch or 3 baby bok choy, sliced16 oz shiitake or crimini mushrooms, slicedShredded carrotsSesame seedsHard boiled egg (soft, boiled 7-8 minutes preferred)Directions1. Pour the broth and tamari into a large soup pan to heat. Add the whole star anise. Bring to a simmer for 10 minutes. Remove the star anise and discard.2. While the broth is heating. Warm olive oil in skilllet. Add diced shallots, sauté 2 minutes. Dice the whites of the green onions, slice the green part and reserve them for topping. Add the diced white parts of the green onion, garlic and grated ginger. Saute another 30 seconds.3. Once you have removed the whole star anise, add the shallot ginger mixture to the broth with the bok choy, noodles and mushrooms. Simmer 6 minutes. Stir in chicken .
