Raclette Ingredients 1 kg small potatoes of choice3 cups water (for boiling potatoes)4 tbsp olive oil (divided)2 cups onion (sliced)1 tsp salt (divided)1/2 tsp ground black pepper1 cup gherkins or other pickle of choice (halved or chopped)1 cup raclette cheese (sliced) Steps Preheat oven at 200 deg C & line a baking tray with parchment paper.Wash & scrub potatoes, place them in a pot filled with water on high heat.Bring to a boil & add 1/2 tsp salt.Mix well, reduce heat to low & simmer until potatoes are fork tender (abt 15-20 mins)Drain potatoes, return them to the pot & cover to keep warm.Heat a pan on medium & add 2 tbsp olive oil.When hot, add onions & cook for 5 mins.When they start to caramelise, stir well & cook for another 5 mins.Add remaining salt & black pepper, mix well & continue cooking until onions fully caramelise.When potatoes are cool enough to handle, cut them in half lengthwise, arrange on lined baking tray, drizzle remaining olive oil & top with pieces of raclette cheese.Bake for 2 mins or until cheese just starts to melt, top with caramelised onion & pickles.Serve immediately with cured meat (optional) Source : www.instagram.com
