Download ImageIngredientsMasala Mix (finely ground)1 black cardamom1 green cardamom3 tsp coriander seeds2 tsp cumin seeds1/2 tsp black peppercorns1 tsp fennel seeds2 dried red chillies1 cm cinnamon stick2 clovesBhaji2 cups potatoes (diced)1 cup cauliflower (diced)1/2 cup carrots (diced)1/2 cup peas1 tbsp oil1 tbsp butter1/2 tsp cumin seeds1 cup onions (finely diced)1 tbsp garlic ginger paste1 cup tomatoes (diced)1/2 cup bell peppers (diced)2 green chillies (finely sliced)2 tsp chilli powder1/2 tsp turmeric powder2&1/2 tbsp masala powder1 tsp salt (to taste)1 tsp tamarind paste5 cups water (divided)1 tbsp fenugreek leavesStepsPlace potatoes, cauliflower, carrots & 3 cups of water in a pot, bring to a boil.Cook for 20 mins, add peas, cook for 10 mins till vegetables are tender, mash roughly & set aside.In a large pan, heat oil & butter on medium high.Add cumin, onion & garlic ginger, sauté till onions turn translucent.Add chilli, turmeric & masala powder, cook for 1 min.Add tomatoes, bell peppers, chillies & cook for 5 mins.Add mashed potato mixture, salt, tamarind paste, remaining water, stir & bring to a boil.Simmer for 15 mins, taste to adjust seasoning & cook till curry reaches desired consistency.Remove from heat, add fenugreek leaves, stir & sprinkle chopped cilantro or parsley on top.Serve bhaji with lemon/lime wedges, finely diced onions & bread of choice.
