Download ImageKuku Sabzi (Persian Herb Omelette) Ingredients6 large eggs5 tbsp extra virgin olive oil2 cups parsley2 cups cilantro1 cup dill1/2 cup scallions1 tsp baking powder1/2 tsp ground cumin1/2 tsp ground cardamom1/2 tsp ground cinnamon1 tsp salt1/4 tsp ground black pepperStepsPreheat oven to 190 deg C.Cut parchment paper to fit base of a 9 inch round springform pan, brush bottom & sides with 2 tbsp olive oil (oil should pool at the bottom & generously coat sides)In a blender, combine parsley, cilantro, dill, scallion & remaining 3 tbsp olive oil, process until finely ground, add 3 eggs, pulse for 10 secs & set aside.In a large bowl, add baking powder, ground spices, salt, pepper & remaining eggs, whisk until combined, add herb egg mixture, stir & pour into prepared pan.Bake for 20 mins or until center of omelette is firm.Let cool in the pan for 10 mins, run a thin knife around the edges to loosen, invert onto a plate, remove parchment paper then re-invert on another serving plate.Slice into wedges, serve with yoghurt, salad, rice or bread of choice.
