Palitos or Deditos de Queso are a popular snack in Latin America, particularly in countries like Colombia, Venezuela, and Ecuador. They are essentially cheese sticks made with a dough that is typically made from corn flour (masa harina), water, and salt, and filled with a string cheese-like cheese called Quesillo or Queso Blanco.

To make Palitos de Queso, the dough is rolled out into thin strips and then wrapped around a small piece of the cheese. The ends are pinched together to seal the cheese inside, and then the sticks are deep-fried until golden brown and crispy.

Palitos de Queso are often served as an appetizer or snack, and are best eaten warm, straight out of the fryer. They can be enjoyed on their own, or dipped in a variety of sauces, such as salsa, guacamole, or ají.
