Churro Cookies Ingredients 125g Unsalted butter (softened)115g Light brown sugar110g Caster Sugar1 Egg1 tsp Vanilla Extract220g Self Raising Flour1/2 tsp Salt For The Churro Coating 100g Caster Sugar2 tbsp Ground cinnamon Steps 1. Preheat the oven to 200c (180c gas, gas mark 4) and line 2 baking trays with parchment paper.2. In a large bowl cream together the butter and sugars until pale and fluffy in texture then add the egg and vanilla extract mixing together well.3. Sift the flour and salt then add into the egg mixture. Mix the ingredients thoroughly until a soft dough forms.4. Split the dough into walnut sized balls and roll them in the caster sugar and cinnamon mixture.5. Place the balls of dough on your baking tray, leaving space for them to spread out when baking in the oven.6. Place in the oven and bake for 7 minutes.
