Download ImageChicken Satay In Peanut Sauce Ingredients(Peanut Sauce)– 4 tbsp @meridianfoods smooth peanut butter– 2 tsp @sriracha_fg– 2 tbsp light soy sauce– 1 tbsp lime juice– 2 tsp brown sugar– 2 tsp garlic and ginger paste(Chicken Marinade)– 330g chicken breast (diced into bite sized chunks)– 200ml coconut milk– 2 tbsp olive oil– 2 tsp tumeric powder– 3 tbsp dark soy sauce– 2 tbsp garlic and ginger paste– 2 tsp brown sugar– 1 tbsp @funkysoulspices Chinese salt and chilli pepper– Salt and pepper to tasteSteps1 In a small bowl, mix together the ingredients for the peanut sauce and add boiling water to reach a sauce-like consistency Set aside or refrigerate if preparing in advance2 In a separate bowl, wash the chicken thoroughly before chopping into bite sized pieces Add the ingredients to form a marinade and refrigerate ideally for a few hours3 When you’re ready to cook, heat a little oil in a pan and add the chicken once it’s hot Cook on a high flame until the sauce begins to disappear and turn each piece to cook evenly on a lower flame, this should take around 20mins4 Thread each piece through a skewer and drizzle in peanut sauce prepared earlier and serve immediately Above is served with salad and garlicky peas and fresh mint rice Source : www.instagram.com
