Download ImageAlmond Cake Ingredients4 eggs, room temperature and separate the yolks and egg whites1/2 cup sugar1 tsp vanilla extract1 1/2 cups super-fine almond flour1 tsp baking powder1/4 tsp salt1/2 tsp apple cider vinegar (optional)Steps To Make It1 preheat oven 350F Prepare an 8” cake pan, butter the bottom and side and sprinkle sugar on top or use parchment paper at the bottom and side of the pan2 in a big bowl, mix the egg yolks, half of the sugar (1/4 cup) and vanilla extract until smooth3 in another bowl, mix all dry ingredients: almond flour, baking powder and salt ( if there are lumps of flour, try to break them loose)4 using a stand mixer, whisk the egg whites with high speed, add vinegar and sugar slowly until a soft peak forms5 add the dry ingredients to the yolk mixture (combine 3 and 2 together)(This will turn into a dough and a little tough)6 fold the egg whites 1 cup at a time into the thick dough, incorporating fully between each addition until all mixed smoothly together (the folding will get easier as more egg white is added, using egg whisker helps with the folding as the dough can get tough)- this part needs some patience7 pour the batter into the prepared pan Bake in the center rack for 30-35 minutes Done when a toothpick inserted into the center comes out clean8 take the cake out and let it cool for 10 minutes or so, run a thin silicone spatula along the edge and release it from the pan, put on wire rack to cool completely if you want to decorate with fruits or icing Otherwise, it taste great warm with a cup of tea!
