Download ImageMdardara With Caramelized Onions Ingredients1 cup green or brown lentils3/4 cup rice (washed and rinsed)2 tbsp olive oil2 onions (1 chopped, 1 sliced)1/2 tsp ground cuminA pinch of salt to tasteStepsHeat 1 tbsp of olive on medium heat and cook the chopped onions until soft.Add the cumin and mix them with the onions.Rince the lentils and place them in the pot along with 3 cups of water.Bring to a boil and let simmer 15 minutes covered or until the lentils are soft but not entirely cooked.Add the washed rice to the pot along with 2 cups of water and salt. Bring to a boil and let simmer covered 10-15 minutes until the rice is soft.Turn off heat, keep covered and let sit 5 minutes.In a separate pan, heat the rest of the olive oil and cook the sliced onions around 15 minutes on medium-high heat until they get caramelized and dark in color.Lower the heat if you feel the onions darken in color too quickly.
