Download ImageWatch Video Courgette Bhajis Ingredients1 large courgette1 cup chickpea flour (gram flour)1 1/2 cups of water (roughly)1 heaped tsp minced green chilli1 heaped tsp minced ginger3/4 tsp cumin powder3/4 tsp coriander powder3/4 tsp garam masala1/2 tsp turmeric powder1/2 tsp red chilli powder1/8 tsp black pepper powder3/4 tsp salt (or to taste)1/8 tsp eno/bicarbonate of sodaMethod1. Add all the dry ingredients above in a bowl and mix together2. Gadually add water and make a batter, making sure there are no lumps (the consistency should coat the back of a spoon thickly)3. Thinly slice the courgettes4. Heat some oil in a deep frying pan5. Coat the courgettes in the batter6. Drop them 1 by 1 into the hot oil7. Fry on a medium heat for about 3/4 minutes on each side or until golden brownFor the chutney:Simply add a handful of basil, coriander, a clove of garlic, half a green chilli (optional), salt and a drizzle of lemon juice to a blender and blitz!Easy as that!
