Download ImageBagels Ingredients2 large eggs1 cup shredded mozzarella cheese2 tablespoons plain cream1 ¼ cups almond flour1 ½ teaspoons baking powderPizza Toppings1 6-ounce can of tomato paste1 teaspoon sea salt1 teaspoon garlic powder1 teaspoon dried Italian herbs1 teaspoon raw apple cider vinegar1 cup shredded mozzarella cheese16 pepperoni slices (Find Beef Pepperoni)8 pepperoni slices, chopped (Find Beef Pepperoni)Garnishes : Dried Fennel SeedsDirectionsPrepare your mini bagels by preheating your oven to 400 degrees Fahrenheit.Melt shredded cheese and cream cheese in a microwave-safe bowl and stir very well to combine.Mix 1 egg, almond flour and baking powder in a large mixing bowl, making sure there are no clumps.Pour in melted cheese and stir well to combine.Form 8 small balls with your hands and place on a baking sheet lined with parchment paper.Flatten a bit with your hand and form a hole in the center of each ball with your thumb to create a traditional bagel shape.Brush each bagel with the remaining egg.Bake in the oven for 12-15 minutes or until golden.Remove from the oven and allow to cool for a few minutes before slicing in half.Prepare your pizza sauce by mixing the canned tomato paste, sea salt, garlic powder, dried Italian herbs and raw apple cider vinegar very well.Spread over each halved bagel and top with a slice of pepperoni (it will cover the whole bagel).Sprinkle each pizza with mozzarella cheese and chopped pepperoni and more dried Italian herbs and dried fennel seed, if using.Bake in the oven until the cheese is melted and bubbly, about 5-8 minutes.Remove from the oven and serve, storing any leftovers in the fridge for up to 3 days.
