Download ImageIngredients4 large portobello mushrooms (brushed & cleaned, cups only)4 red or green bell peppers4 burger buns of choice1 tbsp olive oil4-8 lettuce leavesMushroom Marinade1/8 paprika1/8 ground black pepper1/4 tsp salt1/8 tsp garlic powder1/8 tsp onion powder1/8 tsp coriander powder1/8 tsp dried dill1/8 red chilli flakes1/4 tsp balsamic vinegar1/4 tsp soy sauce4 tbsp olive oilPesto Mayo1 cup mayonnaise2 tbsp pesto (homemade or store bought)2 tsp mustardStepsCombine all ingredients for the mushroom marinade in a large bowl, mix well, add mushrooms & rest for 30 mins.Combine ingredients for the pesto mayo in a small bowl & set aside.Cut bell peppers in half lengthwise, drizzle olive oil, sprinkle with a dash of salt & pepper, set aside.Grill mushrooms in a 180 deg C reheated oven for 30-40 mins until tender & fully cooked.Add bell peppers at the halfway point so they will be done at the same time.To assemble the burgers, spread 1 tbsp pesto mayo over cut sides of buns, place lettuce over bottom halves of buns, top with peppers, place mushrooms caps over peppers & cover with tops of buns.
