Download ImageSingapore Fried Rice Noodles Ingredients400 g or 1 pkt vermicelli rice noodles2 tbsp oil3 cloves garlic (minced)1/2 cup shallots or onion (sliced)2 dried shiitake mushrooms (rehydrated in hot water & sliced)1 cup carrot (julienned)1 cup beans (cut into 2 inch pieces)1 cup chicken or vegetable stock1 tbsp oyster or mushroom sauce2 eggs (lightly beaten)1/2 cup fresh red chillies (sliced)1/2 cup scallion (chopped)1 tsp sesame oil1 tsp salt (to taste)1/2 tsp ground white pepper (to taste)StepsSoak noodles in a big bowl of water for 20-30 mins, drain & set aside.Heat 1 tbsp oil in a wok or large pan on medium high.When hot, add eggs, leave it alone for 1 min, quickly scramble & remove from heat.Add remaining oil into wok, plus garlic & shallots, cook for 1 min.Add mushrooms, carrot & beans, cook for 1 min.Add rehydrated noodles, stock & oyster sauce, cook & stir for 2 mins.Add remaining ingredients & eggs back in, stir for 2 mins then taste to adjust seasoning.Cook until noodles reached desired doneness & serve immediately.
