Download ImageBateta Vada Ingredients (For Approx 25 Vadas)Filling;– 6 medium sized potatoes– 1 medium sized onion– 2 tbsp vegetable oil– 1 1/2 tsp mustard seeds (rye)– 6 green chillies– 3 tbsp chopped ginger– 2 handfuls of pomegranate seeds– Handful of fresh coriander– Handful of curry leaves (limdi)– Half a lemon– 1 1/2 sesame seeds (tul)– 1/2 tsp dhana jeeru powder– 1 tsp salt– 1/2 tumeric powder– 1 tsp sugarBatter;– 200ml water– 10 heaped tbsp gram flour– 1 tsp salt– 1 tsp dhana jeeru– Vegetable oil for fryingSteps1 Heat potatoes in a plastic bag in the microwave for 10 mins/until they become soft2 Heat oil in a pan and add mustard seeds until they start to pop Add the chopped onion and fry for 5 – 10 minutes3 Blitz the chillies and ginger together to make bitty paste and add to onions Add the pomegranate seeds to pan4 Mash the potatoes in a big mixing bowl and add the pan mix (drain the oil,) fresh coriander, curry leaves, sesame seeds, lemon, remaining powders and mix together Roll out into small balls5 For the batter, blitz the gram flour and water Add salt and dhana jeeru to mix Coat the potatoe balls in mixture6 Heat oil in a deep pan (high heat) and add the coated balls until the bottom starts to harden, only then lower the heat and turn to make sure all sides are cooked Drain vadas once all sides are golden and crisp Source : www.instagram.com
