Download ImageSolok Lada (Malay Stuffed Chillies) Ingredients4-8 large green chillies1 cup mackerel (filleted & deboned)1 cup grated fresh coconut (or desiccated coconut 3 tbsp coconut milk)5 shallots (or 1/2 cup onion)2 cloves garlic1 inch ginger1 egg1 tsp salt (to taste)1/2 tsp gula Melaka (or brown sugar)1/4 tsp ground white pepperStepsSlit chillies lengthways with a sharp knife (leaving stems intact), carefully remove seeds & membranes.Steam mackerel fillets for 5 mins, flake with a fork & set aside.Add onion, garlic & ginger into a mortar & pestle (or blender), pound till it becomes a paste & transfer into a bowl.Add coconut, flaked mackerel, egg, salt, sugar & pepper into the same bowl, mix well & taste to adjust seasoning.Stuff each chilli with 2-3 tbsp of fish mixture, arrange them on a steamer basket (slits side up), cover & steam for 15 mins or until they are fully cooked.Serve as part of Nasi Kerabu or with plain rice.
