Season with salt, pepper, Aleppo pepper, cumin and set aside.Peel eggplants, but leave some of the peel on. Make a slit lengthwise and fry in olive oil. Once it is cooked, arrange them on a tray with paper towel, add salt and Aleppo pepper.In the same pot, sauté 1 sliced onion, salt, black pepper and Aleppo pepper, then add the minced garlic, can of crushed tomatoes, and 1/2 cup of water, cook on simmer for about 4-5 minutes. Turn off the heat and add chopped parsley.Add some of the tomato sauce on the bottom of your pot, then fill the eggplants with the ground beef mixture, pour the remaining tomato sauce over and cook on simmer for about 15-20 minutes.
