Kolak Biji Salak (Indonesian Sweet Potato Balls) Ingredients SWEET POTATO BALLS800 gr sweet potato, peeled250 gr tapioca flour1 tsp salt1 1/2 tbsp caster sugarPALM SUGAR SYRUP450 gr palm sugar15 L water6 pandan leaves7 tbsp tapioca flour water1 tbsp Vanilla essenceSALTY COCONUT CREAM300 ml coconut cream mix with 150 ml water or 450 ml coconut milk1 tsp salt2-3 pandan leaves Steps Making Coconut Cream 1 Add coconut cream and water into a sauce pan, if you are using coconut milk, directly pour it into the pan, add pandan leaves and salt, warm it up over lowest heat for 10 mins Off the heat,Set aside Steps Makingsweet Potato Balls 1 Steam sweet potato until tender about 20-25 mins2 Transfer into a large bowl and mash3 Add sugar and salt, mix4 Mix in tapioca flour and knead until well combined and it comes together in one large ball5 Take a small pinch of the sweet potato mixture 5 gr and form into a ball Do it again until all the mixture used up6 In a large pot, fill water 1/2 way and boil7 Add sweet potato balls and cook until they float then cook for another 2-3 mins Steps Making Palm Sugar Syrup 1 Boil 15 L of water in a large pot, add pandan leaves, vanilla essence and palm sugar, mix and lower the heat Let it simmer for 10-15 mins2 Transfer sweet potato balls into the palm sugar syrup3 Add tapioca slurry, mix well4 Serve the sweet potato balls along with the syrup and the salty coconut cream Source : www.instagram.com
