Heat oil in a large pot, char the onion and ginger for 2-3 min over high heat then add the rest of the aromatics and cook for another min2. Add in chicken pieces, scallions, fish sauce, soy sauce, chicken powder, sugar and water. Let it boil, cover, and simmer over low heat for 1 hr3. Add chicken balls and cook for 5-10 mins4.
